d'Albora Nelson Bay is quite the versatile destination providing a marine hub experience catering to various needs of boaters and visitors alike, with its first-class marina facility boasting 196 wet berths accommodating vessels up to 35 meters in length as a welcoming haven for owners. The site also operates one of the busiest full-service boatyard facilities on the NSW East Coast, looking after a range of local Port Stephens vessels, as well as many transient vessels travelling up and down the coast.

Whether you're seeking a secure berth for your vessel, access to amenities and services, or simply a warm reception, d'Albora Nelson Bay is well-equipped to fulfil those needs and more. Sanctuary Cove Boat Show & Marinas 24

d’Albora will once again be taking part at this year’s Sanctuary Cove International Boat Show held on 23rd - 26th May. The team will be onsite representing the brand and our core focus as Australia’s largest premium marina and hospitality network. d’Albora Marine will be showcasing a brand new Azimut 60 Flybridge that will be for sale on the floating marina, so come down and visit the team. Tickets can be purchased HERE.

Following the boat show, Marinas 2024 International Conference and Trade Exhibition will be on and d’Albora will have a strong team presence on hand to attend and represent at this event. A key industry event that is held every 2 years bringing together the best and brightest Australian marine industry experts to discuss all aspects of the marina and marine industry.

Port Macquarie & Batemans Bay Network Integration Complete

Our two latest marina acquisitions (Port Macquarie & Batemans Bay) have now officially been integrated into the d’Albora network, giving members direct access to all the d’Albora membership benefits and features including:

Nelson Bay Game Fishing 2024

February was a busy month for the Nelson Bay team with the annual procession of game boats heading to Port Stephens for tournaments including the Newcastle & Port Stephens Game Fishing Club Shootout and the NSW GFA Interclub State Championships. These events are held over two consecutive weekends and saw solid numbers take part with 150 vessel and 90 vessels respectively go head-to-head in some of the most productive fishing waters in Australia.

d’Albora has been a long-term sponsor of both tournaments with many of the vessels choosing to berth at the marina and take full advantage of our facilities and services. The fishing proved to be consistent with good numbers of marlin, sharks, tuna and dolphin fish being received over the radio sked reports across both weekends. The d’Albora boatyard was also transformed into an official “tournament hub” for the NSW Interclub event that saw many of the anglers, sponsors and public come together share a drink some food and catch up after each day’s fishing. Don’t miss next year’s event and book early as spots are limited with the increased uptake of annual berth holders at this fantastic location.

SEA-FARI 2024

The first d’Albora Sea-Fari members event is planned for 3rd -5th May 2024 and will see the opportunity to get members, family, and friends together for a voyage from Sydney Harbour to Akuna Bay in convoy over 3 days.

The format allows for people to pick and choose what they want to do and be a part of. Friday 3rd May sees the vessels depart Sydney Harbour at 1pm and travel together seaward. Upon arrival it’s an afternoon of free time to enjoy yourselves. Pre-dinner cocktails will begin at 6:30pm followed by a sumptuous dinner feast with 4-hour drinks package at our landmark waterfront venue San Martin. The event theme is “Hawaiian” with best dressed crew prizes on offer. Mixed with some great evening music to dance to get your crew together to take part. Saturday 4th begins with bacon and egg rolls and fresh barista made coffee to wake you up at Shed Café. Then choose to stay around the marina or venture out onto the Hawksbury River or Pittwater for the evening.

Sunday 5th - Head home at any time to suit your leisure and don’t forget to take advantage of our special fuel offer for any vessel taking part in this event. Team Spotlight

General Manager Nelson Bay

Matt Bonser, General Manager at d’Albora Nelson Bay, brings a wealth of experience to his role, drawing from his extensive background as a shipwright and boat builder. His deep roots in the community afford him invaluable insights into its dynamics, positioning him ideally to oversee the expansive operations of the marina.

Matt finds great satisfaction in being at the helm of such a vibrant, year-round business, from managing the bustling boatyard to orchestrating annual events like the game fishing tournaments and Sail Port Stephens. His knack for cultivating professional relationships and leading business development initiatives has been instrumental to the site's ongoing success.

Looking ahead, Matt is excited about enhancing customer engagement and broadening the range of services d’Albora offers to boat owners and marine industry stakeholders in Nelson Bay.

d'Albora Dining

Tuna ceviche tostada, cucumber, avocado mousse, radish, chili, pomegranate

Ceviche is a traditional dish originating from Latin America. There are 2 main ingredients in a ceviche which are fresh seafood and lime. The acidity of the lime juice not only helps us balance flavors in the ceviche, but it also mimics the effects of heat cooking.

Adding ingredients such as Spanish onions, coriander, and chili peppers helps us enhance the flavor profile, adding layers of complexity to the dish.

The key to this recipe is using sushi-grade tuna. Because we are not technically cooking this tuna, it’s super important that it is the highest quality / grade possible, to ensure that it is truly safe to eat.  Sesame oil adds a delicious, toasty flavor to the tuna that makes these tostadas truly shine and combining soy sauce and sesame oil makes the perfect marinade for your tuna.

Fresh ginger not only adds the perfect amount of spice and flavor, but also has nutritional benefits as well.

Tostada shells make the perfect base for this recipe, adding a delicious crunch and Avocado adds the perfect amount of creaminess to these tostadas.

Ingredients (serves 4)

  • Sushi-grade tuna: 400 gr
  • Freshly squeezed Lime juice 50 ml
  • 1 tb spoon of sesame oil
  • 3 tb spoon of soy sauce
  • 1/2 tea spoon fresh ginger grated
  • 4 corn shell tortillas
  • 1 avocado
  • ½ spanish onion diced
  • ½ bunch of coriander chiffonade
  • Cucumber thinly sliced 50 gr
  • 1 pomegranate
  • ¼ chilli thinly sliced
  • ½ tb of Dill freshly chopped

Method

Cut your tuna into cubes and add them to a large bowl alongside the sesame oil, soy sauce, chopped onions, ginger and coriander.

Toss to coat everything well until the tuna cubes are fully marinated then proceed to add lime juice and let it rest for at least 10 minutes before serving.

For the avocado mousse, place avocado, lime juice, 1 tbs of olive oil, season to taste and blend in a food processor until achieving desired consistency.

Deep fry the corn tortillas for about 30 seconds on Each side until they are crispy.

Remove seeds from cucumber and slice it very thinly combining it with our fresh dill, sliced chilli and pomegranate seeds to place on top of our ceviche to add a fresh touch to it.

To serve, place your tostada shells onto a plate and top with your avocado, along with a spoonful of the tuna mixture.

Finally, garnish each tostada with your cucumber, dill, chilli and pomegranate salad, serve and enjoy!
