Long-range weather forecast predicts a warmer, drier summer for Australia with the possibility of fewer cyclones in the region as we begin to move into an El Nino weather pattern. El Niño occurs when the sea surface temperatures in the central and eastern tropical Pacific are significantly warmer than average, leading to a shift in rainfall – away from the western Pacific Ocean and eastern Australia, and toward the central and eastern Pacific Ocean.
Summer is looking to deliver an opportunity for boaters to once again get back out and enjoy the warmer more stable forecast weather. The wild, windy and wet weather that has caused havoc across Australia for the last three summers appears to have ended. The Bureau of Meteorology has confirmed an official end to the La Nina conditions that at times, have made boating difficult, especially in Queensland and NSW, and instead have advised us now we are in a period of El Nino.
That means we can expect a hotter summer with lower rainfall and fewer passage-interrupting, boat-sinking and infrastructure-wrecking cyclones and storms – if the El Nino pattern holds.
Bureau of Meteorology senior climatologist Catherine Ganter said modelling had shown the Pacific Ocean’s temperature in the tropics would reach El Nino levels during winter, a sign that we could expect the same later this year.
"While our El Nino alert criteria have been met, these changes will need to strengthen and sustain themselves over a longer period for us to consider an El Niño event," Ganter said.
El Nino is a weather pattern that cycles every three to five years and predicts a higher chance of drier weather in eastern Australia, and a summer that is warmer than usual for the southern two-thirds of Australia.

Boatyard Nelson Bay, one of d’Albora’s busiest maintenance facilities, continues to strengthen its shipwright and servicing offerings both locally within Port Stephens and also regionally as a major servicing hub for vessels travelling up and down the eastern seaboard whilst also providing access to our marina.
In recent months we were pleased to appoint Jeff Simms, Boatyard Manager and Corey Fisher, Head Shipwright to the team to manage the growing maintenance requirements of our members and the public. They are now managing Lachlan Barton, a 1st apprentice and our most recent graduate Connor McElwain, who recently completed his 4 year apprenticeship with d’Albora and is now a fully qualified shipwright tradesman.

As a key cornerstone investor alongside MA, Balmain will continue its active role in the day-to-day operations and shaping the strategic direction of d'Albora. This ensures the seamless continuation of our management and operations, maintaining a "business as usual" environment.
Paul’s extensive background in engineering and management made him the perfect person to lead the large-scale operations across Boatyard Martha Cove.
Paul gets great satisfaction being involved in projects from conception through to design, construction and ultimately operation, Martha Cove Marine Industrial Precinct as an example has allowed Paul to draw on his previous engineering experiences and guide the site as it transitioned from bare ground to a modern thriving business.
His engagement with local industry stakeholders, forming professional relationships and providing leadership in business development remains a key factor in the operations success today.

To make the carrot puree, cut 1 kg of carrots into equal dices. With the remaining kg of carrots, juice them using a food processor then mix diced carrots with carrot juice, cumin and a table spoon of honey and vacuum seal. Sous vide for 2 hours at 80 degrees. Once carrot have completely cooked and softened, proceed to blend and adjust seasoning.
For the gratin, slice your peeled potatoes into equal thin sizes. Melt your cream and butter in a separate pot. Place your sliced potatoes into evenly layers in a shallow cooking tray, mix with cream, butter, chopped thyme and seasoning. Cover with foil and bake in the oven for 45 minutes at 180 degrees.
Remove from the oven, cool down and portion into your desired size. Once portioned proceed to sear on a flat top until golden brown.
Marinate the asparagus in garlic, olive oil and thyme then chargrilled them until completely cooked.
To make the red wine jus, place chopped garlic into the pan the duck was seared on, Sautee and add red wine, bring to boil then simmer until reduced to half. Add the stock and reduced by half as well or until achieved desired consistency. Stir in the blackcurrant jam and butter. Season well and it is ready to serve.
